Fruit puree, fruit concentrate: what's the difference?

The main distinction between fruit puree and fruit concentrate lies in their manufacturing process, sugar and water content.

 

Fruit puree

La Compagnie des Pruneaux offers purees of Agen prunes and fruits (conventional, organic and babyfood quality), such as apricot, peach, plum, apple, pear, kiwi, mirabelle plum, raspberry, strawberry, blackcurrant, blueberry and blackberry. All these fruits are mainly sourced in France, and as far as possible locally (in the South West of France). Once pasteurized, our purees are available in 220 kg aseptic drums and 20 kg BIBs.

The production cycle of our fruit purees depends on their seasonality. This guarantees maturity and quality. Once carefully selected, the fruit is refined to extract excess fiber, and our cold extraction process guarantees high-quality results. We are able to preserve an authentic taste and original color, because the fruit is not burnt during cooking. As a result, our purees are distinguished by their natural flavor and texture.

 

Fruit concentrate

La Compagnie des Pruneaux offers prune (conventional and organic quality) and date concentrates. Concentrates have a high sugar content (indicated by Brix level and higher than purees). They can be used as sweeteners, naturel coloring agents, and flavor enhancers in your recipes, making them versatile in their applications. Brix level guarantees product stability, and generally packaged in 1300kg IBCs, they can be pasteurized in 275kg aseptic drums.

Concentrate production requires total control and knowledge of our process, from juice decanting to cold concentration, for total microbiological control. The result is a concentrate with a low water content and a very high Brix level. A high-quality product, ideal for incorporation into all kinds of preparations, from nutrition to cosmetics. 

La Compagnie des Pruneaux has the expertise to deliver your puree or concentrate according to your technical specifications (sieve, viscosity and Brix levels) and with the required certification (IFS, IGP, Kosher, and Organic Certifications of France / Switzerland / USDA / China).

 

The choice of raw materials, traceability, controls and food safety (pasteurization and aseptic packaging) and the non-use of artificial additives make our fruit purees and concentrates the ingredients of choice (with preserved nutritional qualities) and ready for use in the food industry.
